How much meat do I get if I order a quarter of a steer and how much does it cost?

We just had a customer buy a full steer.  The steer weighted approximately 1483 pounds (this is a big steer ... the average weight of our steers is 1350).  He dressed out at 890 pounds (this is hanging weight after approximately nine days.  This gives the meat a chance to age and drain).  We charge by the hanging weight (890 lbs. X $2.00 per pound = $1780 plus the cost of butchering = approximately $408.21.  Total cost of a steer is $2188.21).

This customer received a total of 572 pounds of beef (this did not include the weight he received in liver, tongue, oxtails, suet, kidney, soup bones, and heart).  That means he paid $3.83 per pound for the best quality Black Angus meat you can get.  I have done some market research and my closest competitor is selling organic ground beef at $5.29 per pound and NY Strip Steaks at $8.99 per pound, you do the math, we feel we are offering quality beef and very low prices.

The price of beef per hanging weight may vary based on supply and demand.  We try to keep our price low, below market value, to promote sales and develop our markets.  You can be assured of the lowest possible prices for top quality Black Angus beef.

How much freezer space do I need to store a quarter of a steer?

As for freezer space.  We believe that you can fit approximately 27 pounds of frozen beef into one cubic foot of freezer space.  For the above steer, you would need approximately a 22 cubic foot freezer to store all the meat.
